I first baked this cake over twenty years ago after I found the recipe in Essentials of Italian Cookery by Marcella Hazan. The book went back to the library and I forgot all about it. Recently to my delight I found it online, baked it and here is the result!

Lamingtons
Lamingtons are chocolate and coconut covered sponge buns. Popular in Australia they are a bit messy to make but well worth the effort! You can see how I bake them here

Traditional Irish Soda Bread
This is my effort at baking Traditional Irish Soda Bread - it has just four ingredients and is quick and easy to make. you will need 450g of plain white flour, 12 to 14 oz of buttermilk a teaspoon of bread soda and half a teaspoon of salt.
You can see how I made it here - the result is delicious. It also freezes well.
